I had a walk around the woods with our friend Max (@allthingsfungi) and we had so much fun collecting birch tree sap. It was really memorable and it immediately got my interest.   2. Find a birch tree with a minimum diameter of 25 cm and poke a hole around 1 meter from the ground.
  3. If no sap is coming out, stop drilling and look for another tree
  4. If it starts pouring out the sap, add a small tube or similar dripping directly in a bottle or container secured in place with a rope.
  5. Leave it for 24/48 hours before coming back to collect the sap
